I’ve been going to the gym 6 days a week , but this week, it will on be 4 or 5. Work has been very tiring for me. The schedule is outrageous. I don’t get to make my own schedule or pick when I can and can’t work. Since I don’t have another job, other than being in the Army Reserve, nor do I go to school at this time, it means I’m available anytime. I said something about my ridiculous schedule but the boss said, “You don’t have anything else to do, you don’t go to school or have another job blah blah blah so you can work anytim blah blah blah” Yes, but I still need to have a life. Ugh…They way the schedule is set up is totally stupid. I’ll have over night shifts and then the morning I get off, I’ll have to go right back in a few hours later. or either they’ll have me work from like 6pm to 11pm and then have me come in the next day at 7 or 8 am. I don’t get enough sleep or time to take care of things that need to get done. I only get one day off. This is wayyyy worse than the Army. I actually enjoy the Army more. I get more respect  and people don’t talk to me like I’m some kind of dog. I don’t get paid enough for what I do. I cannot wait until I go back on Active Duty…

It’s a restuarant, by the way. Fast food…I worked there before, hint hint… :C 


Well, guys…

It’s been forever since I last posted and I feel bad. A lot has been going on in my life. I have gained so many followers and I am letting you all down. I don’t even know what you guys see in this blog, ugh :C I PROMISE that I will post more now, since I just started working out again. Yeah, I had stopped…Very bad…and I’m paying for it. I have gained weight and am working on losing it again.

Moroccan Quinoa
1 c quinoa
1 T each paprika and ground cumin
1/2 t each ground turmeric, cinnamon, ground ginger, cayenne, and freshly ground black pepper
1 t salt
2 T olive oil
1 stalk celery, diced
3 c sliced red peppers
1 lemon, zested and juiced
1/2 c raisins
1 c cooked white beans (pictured are navy beans)
3 c Jain vegetable stock (broccoli stems, celery stalk, kale stems)
1 large bunch of swiss chard, chopped (about 3 cups)
1/4 c chopped fresh parsley
1/4 c sliced almonds
Place the quinoa in a bowl and cover with water. Set aside.
Mix together all of the spices in a small bowl and set aside.
Heat a large, heavy skillet to medium heat (I used my cast iron  skillet).
Add celery & red peppers saute for 6-7 minutes or  until veggies are soft. Add in the spices, lemon zest and juice, raisins, beans,  and Jain stock.  Drain the quinoa, add it to the skillet, and stir. Bring to a boil and  immediately reduce heat to a simmer. Cover with a lid and allow to  simmer, stirring once or twice, for 15 minutes. Add in swiss chard and  stir, and cover again with the lid and cook for an additional 5 minutes  or until chard is wilted. (If the quinoa is too dry, add a bit more  stock or water.) Remove lid, stir well, and serve, garnished with  parsley and sliced almonds.
